Chocolate and orange mousse
NB: This recipe contains raw eggs and is therefore not suitable to be shared with anyone who is pregnant or in poor health.
125 g (4 ½ oz)
dark chocolate, at least 70% cocoa solids
1 small orange
3 medium eggs
Sit a glass heatproof bowl over a pan that can sit above the pan without touching the bottom; it should be clear by at least 3 cm. You will also need four small glasses or ramekins.
Break the chocolate into small pieces and put it in the bowl.
Zest and juice the orange then set the zest to one side.
Add most of the orange juice to the bowl with the chocolate.
Put about 1.5 cm (½ in) of water into the pan and bring it to a steady simmer over a medium heat.
Place the bowl over, but not touching, the water (double-check that it isn’t touching the surface), and allow the chocolate to melt, stirring it with a wooden spoon.
Separate the eggs, and put the whites in another bowl. Whisk the whites until they form soft peaks using an electric whisk if possible, by which time the chocolate should have melted.
Take the bowl off the pan and add the rest of the orange juice. Tip in the egg yolks and beat them in, working energetically. When the egg yolks are all combined and the chocolate has a lovely glossy appearance, add some of the whisked egg white.
Using a metal spoon, gently fold it in until the mixture is a uniform colour, and then repeat until all the white has been added. Now carefully spoon the chocolate mousse into the glasses or ramekins, tap them on the worktop to level them off, and then put them in the refrigerator to chill for at least 5 hours or overnight.
Just before serving, scatter some of the reserved orange zest over each one.
A few fresh raspberries on the side makes a lovely addition.
This healthier version of a classic dish is still deliciously rich (you may find that it will stretch to 6 servings).
It is adaptable: you could use strong black coffee instead of the orange juice, for instance. You’ll need about 4 tbsp in total.
